Beef San Choy Bow

Ingredients

- ✓2 tsp sesame oil
- ✓600 g lean beef mince
- ✓2 cloves garlic
- ✓2 tsp fresh ginger
- ✓2 medium carrots
- ✓4 spring onions
- ✓1 cups tinned water chestnuts, drained
- ✓2 tbsp salt-reduced soy sauce
- ✓2 tbsp oyster sauce
- ✓2 tbsp kecap manis (sweet soy sauce)
- ✓100 g rice vermicelli noodles
- ✓2 tbsp toasted sesame seeds
- ✓10–12 leaves iceberg lettuce
Method
- Dice the garlic, grate or finely dice the ginger, grate the carrot, finely slice the spring onions and drain and finely chop the water chestnuts.
- Prepare the vermicelli noodles according to the packet instructions, then chop.
- Heat the sesame oil in a wok over high heat. Add the beef mince and use a wooden spoon to break apart any large chunks.
- Once the mince is browned, add the garlic, ginger, carrot, spring onions and water chestnuts. Stir-fry for a few minutes.
- Add the soy sauce, oyster sauce and kecap manis. Stir-fry for another 2–3 minutes.
- Remove from the heat and stir through the vermicelli noodles.
- Serve the beef mixture in iceberg lettuce cups and sprinkle with toasted sesame seeds.
